Email Log does have an option in the setting where you can remove all the data on uninstall, but by default, it will not remove the log data.

WP Optimize plugin js an easy way to remove the database table that the Email Log plugin was using.

From the WP Optimize admin menu, go to;

WP Optimize Database Tables

Scroll down or search for wp_email_log, it will show that the email log plugin is not installed anymore. The next step is to click on the remove button, and the database table will be removed. You can confirm the database table has been removed by searching for it.
